 Homemade Animal Cookies

Ingredients:

COOKIES:

  • 1 cup unsalted butter, room temperature
  • 1 cup white granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour


FROSTING #1:

  • 1/2 cup powdered sugar, sifted
  • 2 tablespoons heavy cream
  • FROSTING #2:
  • 1/2 cup powdered sugar, sifted
  • 2 tablespoons heavy cream, plus 1 to teaspoons if it sits
  • 1 drop red food coloring

TOPPING:

  • Round colored sprinkles

 

Instructions:

In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

Using a pastry blender or your hands, cut the cold butter into the flour mixture until it resembles coarse sand.

In a small bowl, whisk together the egg yolk, milk, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until a dough forms.

Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the chilled dough to a thickness of 1/4 inch (6 mm). Use animal-shaped cookie cutters to cut out the cookies and place them on the prepared baking sheet.


Homemade Animal Crackers

Bake for 12-15 minutes, or until the edges are lightly golden brown.

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
